The fish stew is a gastronomic specialty that is traditionally prepared by the Danube River, including the belt from the junction of three borders (Serbia, Croatia and Hungary) to the settlement of Bogojevo. The rulers had altered for centuries in this territory, but the people of different nations lived together in harmony and left behind their rich cultural, historical and ethnological heritage. Among numerous valuable things, gastronomic specialties occupy a special place, the first among them being the fish stew. Cooking the stew is a ritual that significantly exceeds the satisfaction of basic human need for food. Extreme richness of the area in fish species has also been testified by archaeological findings from Bronze age that men went fishing in the swamp and the surrounding rivers. After the liberation from the Turks, Prince Eugene of Savoy was awarded the property in Belje, Baranja and fishing centre in Apatin by the Austrian court. The property was owned by the Habsburgs by the end of World War I. Apatin Fishing Association was one of the most powerful for more than two centuries gathering thousands of fishermen who either fished or practised the craft there. Thus, Apatin has been known as the centre of fishing. Even today, the forest economy gathers professional fishermen. Special Nature Reserve 'Gornje Podunavlje' flooding area, which covers about 5,560 hectares, is a natural hatchery for about 50 species of freshwater fish among them well known autochthonous species as carp, pike, perch, catfish, etc. Stew can be made of any fish, but must contain carp, as well as other ingredients such as: red, minced, sweet peppers, milled hot pepper, onion, tomato juice, salt, dried chilli pepper, water. It is usually served with noodles.

Potential usability

'Sombor Couldron' - Fish Stew Preparing Contest is a traditional event. It is held annually in mid July at one of the squares in Sombor. It is the day when more than 300 cast-iron cauldrons simmer in the centre of Sombor and over 3,500 visitors meet the culinary magic and the skills of fish stew/soup preparation. Uniquely tasty fish, domestic wine and the best of urban folk music together make the enjoyable experience for all senses. Event ''Sombor Couldron'' was held 15 times so far.''Apatin Fishermen Nights''- Fun tourist event, with gastronomy specialties of fish, specifically fish stew which aims to promote the tourist offer of Apatin. Event ''Apatin Fishermen Nights'' has a long tradition (48 times so far).
